Brioche Breakfast Bites


Having people over for a holiday brunch? Need a festive idea for Christmas morning? These Croque Madam bites could not be easier and are so delicious. I felt a little guilty not doing ham for Christmas dinner, so this was my way to work it into the menu. INGREDIENTS

12 thin slices of ham (I used a honey ham)

6 eggs

1-1/2 cups of half & half

2 cups grated Gruyere cheese

1/4 cup Dijon mustard

Salt and Pepper

12 ounces brioche bread torn into 1 inch pieces (leave this out covered on a cookie sheet overnight to dry it out slightly)

Chopped chives for garnish (optional)


DIRECTIONS

  1. Position rack in upper third of the oven and preheat oven to 400 F. Spray a muffin tin with non-stick cooking spray.

  2. Whisk together eggs, half & half, cheese, mustard, salt and pepper. Fold in the brioche bread and let stand for 15 minutes.

  3. Line each muffin cup with a slice of ham leaving about 1/4 inch sticking out above the rim of the cup.

  4. Divide the brioche mixture evenly between the muffin cups.

  5. Bake 15-18 minutes and let cool slightly before serving.
