Quick Weeknight Meal

My Dad The Pasta-holic

So, if there's one thing my dad and I have in common, it's our love of pasta. I think we could eat it every night of the week if given the opportunity. Thankfully, today there are lots of pasta alternatives from vegan to vegetarian and everything in between. My dad is old school, so I try to keep it as close to the OG as possible.

Pasta Me Mucho

This meal is a riff on a #HelloFresh meal. I used ground pork and high fiber pasta (5 g per serving). The original calls for mozzarella, but I didn't have that on-hand. I substituted an Italian cheese blend and combined it with the pork, along with crushed red pepper and Italian breadcrumbs. I also topped the pasta with it, along with a store bought marinara sauce (Paul Newman to be exact). You roast the ground pork loaves for 25-35 minutes in the oven (so it's better than a fried version).

I paired this with a medium bodied red wine blend. It's absolutely delicious and there are rarely any leftovers.
