Sunday Leftovers My dad is not a fan of leftovers. So, I always look for ways to take leftovers and make them "fresh". In this case, we had leftover BBQ brisket and creamed corn. So tonight's dinner, BBQ Brisket Nachos, helps eliminate food waste and make something old new again. is incredibly easy to make. Heat the oven to 350 degrees. Line a baking sheet with aluminum foil and spray it with Pam. I used store bought tortilla chips. I'm super picky about tortilla chips, but I absolutely love the chips from H-E-B that you can buy in the deli section. They are very thin, crisp and delicious. Spread the chips out across the pan. Add a shredded Mexican cheese blend. Top with chopped up leftover brisket. Drizzle the brisket with BBQ sauce and drizzle over that leftover creamed corn. Think of the creamed corn as a garnish -- not a base. A little goes a long way. Bake until the brisket is warmed through and the cheese is bubbly. Garnish with guacamole, sour cream and Pico de Gallo. I was lazy tonight and just used guacamole. Rosé All Day I paired this dish with a dry rosé. It was light enough to complement the meal, without over taking it. My dad had a second helping of them and absolutely loved the meal. Meals like this help eliminate food waste, which is always a concern for me. Easy Weeknight Meal Italian Herbs & Prosciutto, Please! This is an easy weeknight meal that refrigerates well and is just as delicious for leftovers the next night. Take chicken thighs and brush them with olive oil and season with salt, pepper and Italian herbs. I like to leave the skin on and bone in for maximum flavor. Roast them until no longer pink. Take fresh asparagus and boil 2 to 3 minutes to soften and then remove them and place them in an ice bath to preserve the green color. Wrap the asparagus carefully with prosciutto and top with an Italian cheese blend. Bake until cheese has melted and prosciutto is slightly crispy. It looks fancy and is fast to make. You could modify the recipe and use regular bacon if you are not a fan of prosciutto. I absolutely adore fresh asparagus. It's a good source of antioxidants and helps promote healthy digestion. If you are caring for an elderly family member, regularity is always important. Just a half a cup contains 1.8 grams of fiber -- 7% of your daily needs. It's also low in calories and a great source of Vitamins A, C and K. Quick Weeknight Meal My Dad The Pasta-holic So, if there's one thing my dad and I have in common, it's our love of pasta. I think we could eat it every night of the week if given the opportunity. Thankfully, today there are lots of pasta alternatives from vegan to vegetarian and everything in between. My dad is old school, so I try to keep it as close to the OG as possible. Pasta Me Mucho This meal is a riff on a #HelloFresh meal. I used ground pork and high fiber pasta (5 g per serving). The original calls for mozzarella, but I didn't have that on-hand. I substituted an Italian cheese blend and combined it with the pork, along with crushed red pepper and Italian breadcrumbs. I also topped the pasta with it, along with a store bought marinara sauce (Paul Newman to be exact). You roast the ground pork loaves for 25-35 minutes in the oven (so it's better than a fried version). I paired this with a medium bodied red wine blend. Yep, It's a Double Whammy Honestly, the thing I love most about my birthday on a holiday is breakfast. That may sound weird. But when your birthday is on the one day of the year when businesses are closed, you have to prepare. This year I did just that by getting a 3 cheddar cheese blend to mix into scrambled eggs and serve alongside bacon. The star of the show is the Espresso Martini. It's a combination of espresso (or coffee), Kahlua, Vodka and ice. You can get super creative and rim the glass with sugar or finish it with a splash of eggnog. It's a party in a glass. I also find that it's best to shop the day before Christmas Eve to avoid the crowds. Then your holiday birthday becomes a holiday weekend. Prime rib is the main dinner course with scalloped potatoes. Here are my tips for a perfect prime rib: Get a cut that's bone in. Use a cast iron pan (I have a cast iron pot that's perfect for such things). Prep the meat with a garlic, butter, salt, pepper and thyme rub. Start the oven at 475 or 500 degrees and roast the prime rib for 20 minutes, then reduce the heat to 350 degrees. For the scalloped potatoes: Slice the potatoes very thin. Make a roux (butter, flour, milk) and simmer on low heat in a pan. Add a 3 cheese cheddar blend to the pan. Thin it out with more milk, if it's too thick. You want the consistency to be almost like an Alfredo sauce. Spray a baking pan with PAM. Layer the bottom of the baking pan with the roux. Add the potatoes and continue to layer roux and shredded cheese. Top with a good layer of cheese before baking at 350 degrees. I added the potatoes to the oven with the prime rib once I reduced the heat to 350 degrees. The beautiful thing about the meal is that you only use 3 pans. And the meal bakes simultaneously for 2 hours in the oven while you enjoy your day! For the wine, I like a good Cabernet Sauvignon with the prime rib. Merry Christmas to all and to all a good night!

Last weekend was a blast at #popcats. I had the chance to meet fellow cat lovers and introduce them to the Comfort Diva brand. Pop Cats is a show that celebrates cat-themed pop art and encourages cat adoptions. I am delighted to report that multiple cats received new homes and new love at the Austin, Texas event. I am thrilled to welcome new cat lovers to Comfort Diva and encourage you to share your product ideas for future launches with me. A Purr-fect Experience: Setting Up Our Booth at the Cat-Themed Trade Show As the doors opened and the hum of excited chatter filled the air, I knew we were in for something special. Pop Cats, which I’d been eagerly anticipating for months, had finally arrived, and my booth was ready to welcome fellow cat enthusiasts. What I didn't expect, though, was how truly rewarding the experience would be—not just in terms of business, but in the personal connections, learning opportunities, and sheer joy it brought. The Setup: Transforming a Space into a Feline Wonderland Setting up our booth was a labor of love. We decided to go all out, transforming our modest 8x8 space into a feline wonderland that would make any cat lover purr with delight. From the whimsical luggage tags to the glamorous shower curtain, every inch of space was used to introduce cat lovers to the Comfort Diva brand. One of the biggest hits was the Childless Cat Ladies Vote t-shirt, which I only had samples of and picked those up on my way to set up the booth in Austin. Fortunately, the customers who visited the booth were understanding, and couldn't believe that I actually had them in time for the show. These are now on the website and on Etsy. The People: Connecting with Fellow Cat Lovers The highlight of the trade show was, without a doubt, the people. From the moment we opened our booth, we were met with a steady stream of visitors—each one as passionate about cats as we are. Conversations flowed easily as we exchanged stories about our own fur babies, shared tips on cat care, and discussed the latest trends in the feline world. I was awestruck by the calmness of the cats who were leashed or in carriers at the show. They were purrfectly content to receive pets from strangers and to be with their owners at the show. It made me wish that my 2 fur babies were more receptive to being out in public. The Community: Learning and Growing Together Participating in the trade show also gave us the chance to learn from our customers about what they would like to see next from Comfort Diva. I am busily working on new products such as beach towels and holiday gear. The Joy: Celebrating All Things Cats Beyond the business aspect, the sheer joy of being surrounded by everything cat-related was an experience in itself. Everywhere you looked, there were adorable feline-themed products—from quirky artwork and clothing to high-tech gadgets designed to keep cats entertained for hours. The energy was infectious, and it was impossible not to smile as you walked through the aisles. Seeing so many people come together to celebrate their love for cats reminded me why I started this journey in the first place. The trade show wasn't just about selling products; it was about being part of a larger community that shares a common passion. Conclusion: A Purr-fectly Positive Experience As I packed up our booth at the end of the weekend, I felt an overwhelming sense of gratitude. The cat-themed trade show was more than just a successful business venture—it was a positive, heartwarming experience that deepened my love for what I do. It reinforced the importance of connecting with our customers, learning from our peers, and celebrating the joy that our feline friends bring into our lives. I left the show inspired, motivated, and already looking forward to the next one, which will be Loving Cats Worldwide in Dallas, Texas, on November 9 and 10. He arrived on my doorstep with an upper respiratory infection and giardia. It took weeks of hospitalization to get him well. He is the sweetest cat and worth every penny spent to get him well. I strongly encourage pet adoption because it will change your life and the animal's life positively forever. Below is a video of my cat Latte that I shared on social media. Viva Italiano! A great way to start a Sunday is with this riff on an Ina Garten make ahead meal. When you are a caretaker, it's mission critical to have food on-hand for multiple meals. This breakfast and brunch baked Italian egg mini-Frittata hits the mark. You sauté chopped leeks for 3 minutes in olive oil and add to it chopped prosciutto and then fresh spinach. Remove it from the heat and top it with fresh basil. Separately, you beat 8 eggs with half and half, salt and pepper. With tongs, add the mixture to a 12 muffin tin coated with olive oil or Pam. The recipe calls for grated Fontina, but I already had a shredded Italian cheese blend on-hand, so I substituted that. Transfer the egg mixture to a Pyrex pouring cup and pour over the vegetables. Top it off with grated Parmesan cheese. You bake the Frittata at 375 degrees for 20 to 25 minutes in a muffin pan in the oven. I love baked meals because they are less caloric than fried and you can greet guests or take care of a parent or child while it's in the oven. I also try to manage meals so that I can maximize an ingredient to prevent food waste. In this case, I also used the prosciutto to wrap asparagus that I baked off earlier in the week. Post on that meal to come. Health Benefits Spinach is high in Vitamin C , a powerful antioxidant for immune support, Vitamin K1, Folic Acid, Calcium and Iron -- remember Popeye? Leeks are rich in flavonoids which have anti-inflammatory properties. Great for anyone with an overactive immune system to reduce inflammation. They are great for healthy cardiovascular support. Basil contains antioxidants such as lutein and beta-carotene . Eggs are a great source of protein and healthy Omega-3 fats . I like to serve this with cantaloupe. This helps to keep it a low carb, healthy meal. If you want to make this as a vegetarian meal, you could always substitute the prosciutto with chopped Portobello mushrooms. Freeze Frame The greatest part of this is that if you are cooking for 2 or 3, you can have the leftovers the next day or freeze it. If you are having a brunch with friends, it looks fancy without a huge amount of time invested. Busta Move Pesto Pasta Viva Italia I love pesto pasta. Pesto with anything, actually, will make my day. This is a dish that is super-duper easy to make and is a great way to use the leftover chicken breast from rotisserie chicken. I thought ahead (for once) with this dish and bought the Italian herb rotisserie chicken at H-E-B supermarket. I love rotisserie chicken, but I prefer to eat the dark meat on its own and use the breast pieces for things like this dish or chicken salad. The secret to making this perfectly for guests is to use (1) fresh pasta and (2) roast the broccoli florets at 400 degrees on a non-stick pan tossed with olive oil, salt, pepper, Italian herb bread crumbs and parmesan cheese. I could actually eat the broccoli on its own this way -- no pasta or meat required. While the broccoli roasts, boil the fresh pasta in salted water until it floats to the top. Separately in a non-stick skillet, heat olive oil and add the chicken, fresh tomatoes, salt, pepper and a tablespoon of pesto sauce. You can totally use a store bought pesto sauce for this dish. (I did tonight.) If you have a dry white wine on-hand, add a touch to the skillet. Once the chicken and tomatoes are heated through, take the broccoli from the oven and add it to the skillet. Once the pasta is finished cooking, drain it and then combine the chicken, tomatoes and broccoli with the pasta off of the heat. Finish the dish with a little more pesto sauce and top it with parmesan cheese. If you want to really kick this up to another level, you can make fresh pesto sauce with arugula, olive oil, parmesan and garlic in a food processor. Once the broccoli roasts, you can even throw in some florets and combine it with the other elements for the pesto sauce. Sauvignon Blanc, Yes, Please I paired this with a sauvignon blanc, because it has a fresh, green, citrus palate which goes nicely with the fresh vegetables and pesto sauce. My dad absolutely loved this dish. What I love the most is that you can go from zero to done in less than 30 minutes. And, if you are vegetarian, just leave out the chicken.
